An Extraordinary Dining Experience

Ginza Hassen is a culinary journey that conveys the abundant flavors of Aomori Prefecture’s Hachinohe City through exquisite cuisine. Within its limited 8-seat capacity, guests are invited to envision its richness and experience the space as an integral part of the culinary adventure.

This sentiment is encapsulated in the design, featuring Hachinohe pottery with green glaze as the focal point, “Nambu Textiles” on the curtains and chair upholstery, together with “Aomori Cypress” on the counter surface.

Shuichi Sugimoto

Born as the eldest son of a sushi chef, Sugimoto’s culinary journey includes training in traditional establishments such as ryotei (traditional Japanese restaurant).

From becoming head chef at a renowned Akasaka ryotei to leading the Japanese cuisine department at a prestigious Yokohama hotel and managing a kappo-style restaurant, Sugimoto’s path led him to open “Sugimoto” in Azabudai in 2005.

Relocating to Ginza in 2016 as “Ginza Sugimoto” and finally transitioning to “Ginza Hassen” in 2022. Specializing in premium ingredients and excelling in various styles, including Japanese modern and kaiseki cuisine.
