Delve into the Essence of Fermentation and Aging with Sophisticated Japanese Cuisine
Every dish we serve is born from the concept of "fermentation and aging." For instance, our signature dish, "Miso-Marinated Beef," is prepared by marinating beef in three-year aged miso and slow-cooking it at 58 degrees before grilling. The beef, soaked overnight in sweet rice porridge (amazake) and long-aged miso, is tenderized further by the protein-degrading enzymes present in the rice koji.
