I want everyone to enjoy the deliciousness of sake wherever they are.
This time, I decided to start crowdfunding.
Thoughts on concept and development
It was five years ago that I made this glass.
Originally interested in sake sets, while researching at seminars and self-education,
(1) The way you feel the mouth and aroma of sake, wine, etc. varies greatly depending on the shape, material, thickness of the mouth, etc.
(2) The best sake set for sake is "tin", which has high thermal conductivity, and in addition to the quick cooling of the mouth, it also has a water purification effect.

Actually, based on the above three items, when I launched the third store, "Kuzushi Kappou Tempura Takean" five years ago, I sought to make a tin wine glass, but the start-up cost was enormous. I gave up because there was a high possibility that I couldn't do it technically.
However, if you purchase two types of wine glasses and tin scents that specialize in fragrance at the store and have customers who have visited the store for the past five years drink the glasses separately, the difference in taste, the mouth, and the scent Many customers were impressed and pleased with the difference, and we continued to research glass.
And this is the ultimate sake glass! I decided to make a glass because I was convinced.
Commitment to the glass
(1) I searched for a workshop that could realize the ideal shape, and met Mr. Hashimoto Kinzoku from Tsubame Sanjo City, Niigata. It is now possible to create shapes that refer to wine and liquor glasses, which are easy to raise the aroma with metal, which was difficult five years ago.
* By making two R curves with S-shaped sides, the structure is finished to enhance the scent.
(2) Instead of tin, which is soft and difficult to process, we chose copper as the main material, which also has high thermal conductivity, at the suggestion of Mr. Kobo. As a result, we succeeded in reducing the weight of the glass and achieving the thinness (0.7 mm) of a high-class wine glass at the mouth.

Encounter leading up to creation
In addition, we could not reach the completion without the cooperation of many people in making this glass.

Originally, Tsubamesanjo City has been a craftsman's town for a long time, and it is an area where the production of cutlery, hardware and Western food season is thriving, and now it has the highest level of manufacturing technology in the world as "Manufacturing Town Tsubamesanjo". It is an area where companies and craftsmen are gathering.

I asked him to make tin and copper choko with reference to the shape of the wine glass, which I thought was impossible five years ago.
When making this glass, it was still difficult to make this shape with metal, and there was a danger that it might not be possible to make it in the middle.
I asked them to try it over and over again by hand to make the current glass.
It is a carefully selected glass made by hand by a craftsman who inherited the tradition at MADE IN JAPAN.

Process to completion
First step: Shape creation
All the work is basically handmade by craftsmen, but since it is necessary to first make a drawing of the product image from the start-up concept stage, 3D measurement is performed using a digital measuring machine using the latest equipment and complicated shapes are drawn into the figure. It took more than a day to create.
Second step: Completion of the mold
We prepared the necessary tools (mold) based on the drawings, and tried many times with a prototype mold because of the shape that was unprecedented in the past.
In the process, even with the experience of a skilled craftsman, it is often not possible to make the product as shown in the drawing.
Among them, the most difficult point was the curved part of the side. Since this depends on the feeling transmitted to the craftsman's hand, vibration and the amount of force, it will break if the material becomes thin due to the amount of force while deforming and adjusting the shape while stretching the material. ..
Even if you are a craftsman, every time you make a new product, it will be a task to remind yourself of a new feeling.
Another point I was conscious of was the thinness of the mouth, and I focused on maintaining an appropriate thinness in consideration of the mouthfeel.
Third process: Finishing, surface treatment, polishing work
With the image of a finished product, we perform surface treatment while assuming how much work and polishing should be performed to complete the product.
If you neglect this step, it is an important part that will be affected at the time of completion.
Final process: Komi dyeing
It is a color that utilizes the unique chemical changes of copper materials.
Unlike spraying paint, it is a processing method in which copper and liquid react with each other by immersing them in a certain liquid, and the color is dyed.
Since it is a manual work that dyes differently depending on the time and temperature, each has a slightly different look.
Also, because it is dyed, unlike painting, there is no worry that the paint will accidentally come off and enter the human body.

This sake glass is a work that the craftsmen of "Tsubamesanjo", the best metal processing town in Japan, collided with all the theories that can be considered from the experience of my restaurant site for more than 30 years. Produced from the perspective of a professional in the field of eating and drinking, who has always listened to the opinions of consumers, not from the creators, sake breweries, or customers, and wondered how to get them to drink deliciously.
